On an NA engine, all other things being equal, torque roughly goes hand in hand with displacement. If you're able to rev the same afterwards, your power will increase proportionally also. However, if you're stroking it to increase your displacement, you'll probably lose some ability to rev as high. But with our stock engines having more headroom left, I don't know if that would become a limitation in reality.

If you really had a choice of how to increase your displacement, you'd want to increase the bore instead. That way you'd get all the displacement, the stroke would be shorter so you could rev higher, and the bore would be larger so you could use bigger valves to make it breathe better. But we don't have that option.
